primary tea processing consists of no roasting, scenting, or spicing.
the highest grades of white tea, yellow tea, , green tea made tender tea shoots picked spring. these young tea shoots may consist of single terminal bud, bud adjacent leaf or bud 2 adjacent unfurled leaves. required leaves equal in length or shorter buds.
the more-oxidized tea—such red or oolong tea—are made more mature leaves. example, anxi tieguanyin (grown in tea region of anxi in fujian), made 1 bud 2 4 leaves.
not high grade green tea made tender tea shoots. highly regarded green tea lu gua pian made more matured leaves.
traditionally these tender tea shoots picked before 5 april, or qingming festival. standard practice start picking when 5% of garden ready, or when tea buds reach size. in tea gardens, tea shoots picked daily, or every 2 days.
